If you turn on iCloud sync, a copy lives in your own private iCloud (never on our servers). Before deleting the app, export your transactions from Settings → Data → Export as CSV if you want a backup.
Lay the receipt flat, fill the frame, and shoot straight-on in decent light. The photo is read on-device by Apple's recognition engine — it is never uploaded to us. (Like the rest of your data, a kept photo syncs to your own private iCloud only if you turn iCloud sync on.)
